Preparing the Delicious Chicken Fried Rice from Scratch

Ingredients

  • For the Chicken:
    • 1 cup cooked chicken, diced (use leftover rotisserie chicken or cook fresh chicken breast)
    • 1 tablespoon soy sauce
    • 1 teaspoon sesame oil (optional)
  • For the Fried Rice:
    • 3 cups cooked rice (preferably day-old rice for better texture)
    • 2 tablespoons vegetable oil (or any cooking oil)
    • 2 eggs, lightly beaten
    • 1 cup mixed vegetables (like peas, carrots, and corn)
    • 3 green onions, chopped
    • 2-3 tablespoons soy sauce (to taste)
    • 1 teaspoon garlic, minced
    • 1 teaspoon ginger, minced (optional)
    • Salt and pepper, to taste

Instructions

  1. Prepare the Chicken:
    • If using fresh chicken, cook it in a skillet over medium heat until fully cooked. Dice it and toss with soy sauce and sesame oil. Set aside.
  2. Heat the Oil:
    • In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Scramble the Eggs:
    • Add the beaten eggs to the skillet and scramble until just set. Remove from the skillet and set aside.
  4. Stir-Fry Vegetables:
    • In the same skillet, add garlic and ginger (if using), and stir-fry for about 30 seconds until fragrant. Then add the mixed vegetables and cook for 2-3 minutes until tender.
  5. Add Rice:
    • Add the cooked rice to the skillet, breaking up any clumps. Stir-fry for a few minutes until heated through.
  6. Combine Everything:
    • Add the cooked chicken, scrambled eggs, green onions, and soy sauce. Stir everything together, ensuring the rice is evenly coated. Season with salt and pepper to taste.
  7. Serve:
    • Remove from heat and serve hot. Enjoy your homemade chicken fried rice!

Tips

  • Day-Old Rice: Using day-old rice is ideal as it dries out a bit, preventing mushy fried rice.
  • Customization: Feel free to add other ingredients like bell peppers, mushrooms, or shrimp for variety.
  • High Heat: Cooking on high heat helps achieve that perfect fried rice texture.
